Mushver (Mucver)





I love zucchinis and the following recipes use them as the main ingredient.
The first recipe is a Turkish recipe. I make it as my husband’s family makes it, but I’ll also show you a variation:

Mushver (Mucver)

Ingredients
1 large zucchini
½ cup parsley (chopped) (you can use dried parley too, just use less)
½ cup dill (chopped) (you can use dried too, use less)
1 egg
Flour

Grate zucchini and squeeze to get the water out. Mix all the ingredients. Add flour until the mix is not too watery (usually I end up adding a bit more of flour if I fry the 1st mucver and it breaks apart while frying).

In a large skillet add vegetable oil and when warm, add lumps of the zucchini mixture (I use a small ladle for this) and fry for about 3 min on each side on medium high heat. Take them out and place on a plate with paper towels to dry.
Serve with plain yogurt on top.
